Unstuffed Peppers in Instant Pot, Great for Camping

Unstuffed Peppers

I first tried unstuffed peppers, when a friend served them on a camping trip.  They were prepared in the Instant Pot and I thought they were delicious!  They tasted much like stuffed bell peppers, but were an easier to prepare version.  I have made them many times since, with minor modifications.  They are also a convenient meal while camping.

The Instant Pot makes this dish so fast and easy.  If you haven’t began using this kitchen tool, I think you would be surprised at useful it is.  It is truly a game changer.  I have two of the pots, a six quart and a three quart.  I always have the 3 quart on the road with me and for long trips,  I take the 6 quart as well.

My husband and I are actively working on our diet to address health issues and increasing protein is a significant component of it.  I was careful to use grass-fed ground beef for this recipe. One quarter serving has 33 grams of protein.  I found some grass-fed beef at Wal-mart that was quite reasonably priced.  Claude, Anthropic’s AI, has given the dish a thumbs up!  So, it’s a win in many ways.

Claude suggested that I share this on my blog.  So, I am going to begin posting recipes that are good for camping.  I would like to hear from you if you would like to see more like this.

Preparing While Camping 

One major reason this recipe works well for camping is that it has a modest number of ingredients that you could easily find on the road. Additionally, it all cooks in one pot and does not take a lot of space in the camper.

In Conclusion 

If you have an Instant Pot, I recommend giving them a try  and if you haven’t used one, think about it.  It is my favorite kitchen item.
